I tossed my sourdough starter out!  I had put it into a different jar so I could clean the one I normally keep it in, and when I came across this "different" jar of starter in the fridge, I thought it was some extra that had been forgotten.  I just poured it down the drain.  Then today, when I went to feed it...no more starter. >.<

It had just reached a stage where I was finally getting good, consistent results with my bread. Now I have to start all over.

Argh!

Ah well.

You could try cultivating your own yeast and working from that? I did that with raisins, and it worked nicely.

*nods* That was what this starter was: one I had made myself. Back to the drawing board...er, mason jar. Now where did I put that flour...

Does sourdough not need to be kneaded? (That sentence sounds funny in my head. :P) Eitan tried to make a starter once but I was weirded out by having something living in my fridge that I needed to feed. o.O Also I don't have the patience to wait so long for something to rise!

I actually love kneading dough.

No, you don't have to knead the sourdough. The long fermentation takes care of that part for you. I used to love to knead dough until I got the tendinitis. Now I find it painful and really got on a no-knead kick.

Don't be weirded out by the starter! It is the coolest thing. And sourdough pasta? Scrumptious! I've been meaning to post a recipe and photos.... One of these days.
