The silly thing is, when I was typing up the first post and mentioned flours being stripped of all nutrients, my brain did a little hick about those very "good" things being what molds and goes rancid, but I had a bone to pick, and I kept on gnawing...wrong bone or no. :P  Guess that'll learn me.

Unrelated to your comments on mold, I recently bookmarked a biography of Dorothy Hodgkin (http://www.nobelprize.org/nobel_prizes/chemistry/laureates/1964/hodgkin-bio.html) with the intent of finding it in a library.
